: Preheat waffle iron.

: Pour evaporated milk into a 2 cup (500 mL) measuring cup. Add enough lemon juice or vinegar to bring mixture to 2 cups (500 mL). Stir to combine. Mixture will thicken.

: Whisk together evaporated milk mixture, eggs, melted butter and vanilla in a large bowl. Combine dry ingredients and stir into evaporated milk mixture. Mix until blended.

: Ladle batter into preheated waffle iron. Cook the waffles until golden and crisp. Cool on wire cooling rack.

: Cut each waffle in half. Skewer each waffle lengthwise. Drizzle with melted chocolate and top with sprinkles.
