: Preheat oven to 350ºF (180ºC). Place 12 cup muffin pan in oven while it is heating up.

: Combine flour, 1 cup (250mL) grated cheese and salt in a large bowl.

: Combine evaporated milk and water and heat to 125ºF/60ºC (approximately 1 minute on high in the microwave) and whisk with eggs. Add to flour mixture. Do not over mix. Don’t worry if there are a few lumps.

: Remove hot pan from the oven. Spray with non-stick cooking spray. Put 1/3 cup (75mL) batter into each cup. Sprinkle with remaining 1 cup (250mL) grated cheese.

: Bake in preheated oven 35-40 minutes until puffed and browned. Serve hot.
